Dr. Simona Fabroni, is permanent senior researcher in food science and technology at the Council for Agricultural Research and Economics (CREA) - Research Center for Olive, Fruit and Citrus Crops (Italy, 2005-present). In 2009 she has completed her PhD in Food Science and Technology, University of Catania, Italy. From 2005 she has been working studying on quality and biological properties of fresh fruits and processed products focusing the attention on the investigation of the main bioactive constituents (anthocyanins, flavonoids, hydroxycinnamic acids, vitamins) and promoting the development of new technologies for the processing industry. She has also conducted studies on the nutritional and nutraceutical quality of organic fruits and horticultural crops while performing traceability studies for the valorisation and protection of food products protected by European designations (Organic, PDO, PGI). She’s actually PI of national and international projects. She has published more than 75 papers, (including 45 indexed in Scopus peer-reviewed papers). H-index: 18 (1157 citations by 1060 documents).
