A/Prof Tan Lay Poh is a faculty in the School of Materials Science and Engineering, Nanyang Technological University, Singapore. Her past work has been focused on tissue engineering and using mechanotransduction to induce differentiation in stem cells as well as designing materials structures and studying the structure-property relationships. With more than a decade of experience in these areas, she is now translating these knowledge into the space of food. She is adopting mechanotransduction strategies to develop cultivated meat without the need of costly and complex differentiation media which is still the main method used by the industry currently. She is also interested in understanding and manipulating structures-property relationship of materials to develop unique structures of plant based meat developed using 3D printing.
