I am Dr. Jaydeep Pinakinbhai Dave, a dedicated researcher in the field of Food Science with a passion for developing sustainable and innovative solutions to enhance food safety, functionality, and quality. I hold a Ph.D. in Food Science from King Mongkut’s Institute of Technology Ladkrabang (KMITL), Thailand, where my work focused on sustainable processing techniques and the valorization of by-products for functional food applications. My journey in food science has allowed me to address critical issues in the food industry, combining technology with sustainability to create practical and impactful solutions. Currently, I am a Postdoctoral Researcher at Mahidol University in Thailand, where I am pioneering the development of aptamer-based electrochemical biosensors aimed at improving food safety and medical diagnostics. My research integrates aptamer technology and electrochemical analysis, creating sensitive and specific detection systems capable of rapid, point-of-care testing. This work is essential for addressing food safety concerns and provides accessible health diagnostics in the medical field. In addition to my work in biosensing, I am passionate about food packaging innovation. During my time at CSIR-Central Food Technological Research Institute (CFTRI) in India, I contributed to the development of smart and active packaging technologies, including time-temperature indicators (TTIs) that monitor the shelf life of perishable products. These indicators play a crucial role in reducing food waste and enhancing consumer safety. My patent portfolio reflects my dedication to advancing packaging technologies that support both food safety and environmental sustainability. My research also extends into the sustainable valorization of food by-products, especially focusing on high-value compounds like polyunsaturated fatty acids (PUFAs) from fish by-products. By applying solvent-free extraction and nano-encapsulation techniques, I have contributed to the development of nutrient-rich food products while addressing environmental impact. This work underscores my commitment to creating circular economy models within the food industry.
With several peer-reviewed publications and active involvement in international conferences, I am excited to share my insights on sustainable food technologies, biosensor applications, and advanced packaging solutions. I believe that by combining scientific rigor with practical application, we can make meaningful strides toward a safer, more sustainable, and healthier global food system.
