Dr. Fedrick Charles Mgomi is currently working as a postdoctoral fellow at the College of Food Science and Engineering at Yangzhou University, China. He is a distinguished scholar in the field of food science, focusing on improving probiotic survival against harsh conditions during processing, transportation, and storage. He earned his Bachelor's degree in Molecular Biology and Biotechnology (2012-2015) from the University of Dar-Es-Salaam, Tanzania, and his Master's degree from Zhejiang Ocean University (2017-2019), where he specialized in Food Safety and Processing, laying the groundwork for his expertise in the complexities of food production systems. He further pursued a PhD at Yangzhou University (2020-2024), with a concentration in Food Science and Engineering, where his research delved deeper into the intersection of Food Safety, Food Microbiology, and Innovative Food Processing Techniques. Throughout his academic career, Dr. Fedrick has contributed significantly to the scientific community through a series of publications, with more than 17 papers in Food Microbiology, mainly focusing on Food Safety and product development. He is also a reviewer for several journals indexed by Web of Science (JOURNAL OF DIARY RESEARCH, FOOD CONTROL, INTERNATIONAL JOURNAL OF DAIRY TECHNOLOGY, JOURNAL OF QUALITY ASSURANCE AND SAFETY OF CROPS & FOOD).
